It is Chanukah time! What is more enticing and delicious than a homemade donut? Think of the crisp outside the fluffy center and then filled or dusted with powdered sugar. What could be better than that? These gluten-free zeppola are simple and easy to prepare and are absolutely fantastic. This gluten-free donut recipe is a winner. A recipe that is truly perfect for Chanukah!
Who doesn’t love a delicious fried donut? When it comes to holidays, donuts take the cake for being the most fun Chanukah food. And while it is super easy to purchase gorgeous donuts at bakeries it isn’t as easy when you are gluten-free. It is certainly possible to make gluten-free donuts from scratch, but its hard to perfect. Which is why I am so excited to share this easy recipe!
Now, is this a frosted donut with sprinkles filled with custard … not really. But is it super easy, celiac kid approved, and super delicious

10-Ingredients to PERFECT gluten-free donuts!
The best part is that all the ingredients can be found in your gluten-free pantry.
•Instant yeast
•Raw Honey
•avocado oil
•kosher salt
•King Arthur measure to measure flour
•baking powder
•eggs
•vanilla extract
•orange zest
•neutral oil for frying
•Powdered Sugar: optional
But… What if I Don’t Want to Fry?
While frying makes the most delicious donut, I’ll be the first to admit that it’s not the healthiest… but it is Chanukah and 8 days of fried food and that is just the way it is!
Kitchen Tools You Will Need:
Frying thermometer: It is important to fry at the correct temperature in order to have the donuts golden on the outside and cooked in the middle.
Cookie scoop: The dough will be very sticky and handling it too much will affect the texture so it’s best to use a cookie scoop.
How to Make These Donuts:
Making these donuts couldn’t be any easier! You are going to make everything in 1 bowl.
Mix the yeast, honey and warm water in a large bowl, set aside, and gather your other ingredients.
Once the mixture is bubbling, add all other ingredients to the bowl. Cover with a tea towel and set aside to rise for 2 hours.
Then, 15 minutes before the 2 hrs. is up heat oil in a large pot to 350-375 degrees. You really need a thermometer to test the temperature before frying.
Once they’re golden on both sides drain on prepared baking tray. Then dust them with powdered sugar, and enjoy right away!

INGREDIENTS

- 1 heaping tablespoon instant yeast

- 3 tablespoons raw honey

- 1 ½ cups warm water

- 2 teaspoons of baking powder

- 2 eggs

- 1 teaspoon vanilla extract

- 1 tablespoon avocado oil
-
- 3/4 teaspoon table salt

- 405 g (3 1/3 cups) King Arthur measure to measure flour

- Zest of 1 small orange (approximately 1 1/2-2 tsp)

- Neutral oil for frying
-
- Confectioners’ sugar
INSTRUCTIONS

- Place yeast, honey and water in a large bowl. Stir to combine.

- Zest 1 orange and set aside.

- Once the yeast mixture in bubbling, add all other ingredients to the bowl.

- Cover with a tea towel or greased saran wrap and set aside in a warm place to rise. Let rise 2 hours.

- Prepare a baking sheet lined with paper towels set aside.

- After 1 hour and 45 minutes heat your oil. Bring oil to 350-375 degrees ( the perfect temperature for frying)

- With a 1/4 cup cookie scoop, scoop out portions into the hot oil ( don’t crowd the pot)

- Drain the donuts on the prepared sheet.

- Dust with confectioners’ sugar and enjoy!
